This Rougui has a higher spiciness due to being baked over high heat. The first few brews are fast in and out to avoid bitterness, and after the third brewing, the soaking time of the tea leaves can be adjusted according to the preference for strength. This tea is rich in natural pectin, which will thicken as it is steeped.
