Origin of variety
Que Shou, or Sparrow Tongue, is one of the rare varieties native to Mount Wuyi, renowned for its distinctive flavor in rock tea and a regular participant in various tea competitions in China. Its name derives from the small, delicate, and serrated tea leaves, resembling the tongue of a sparrow. Historically, it was regarded as the premium tribute tea.
The cultivation area of Sparrow Tongue in the Wuyi rock tea production region is limited, and it demands a high level of natural environment. Under the right conditions of diffuse reflection light, moderate moisture, and soil nourishment, this variety exhibits a stunning floral aroma. Initially, I found the fragrance to be striking and captivating, yet the overwhelming floral powder scent would grip my taste buds. The aroma of Sparrow Tongue blends easily with water, evolving from gardenia-like fragrance to vanilla cream aroma. Each cup of tea offers a distinct change in aroma.
